Fiesta No Siesta is Yellow Bourbon Arabica coffee grown by Mayan communities on the high altitude hillsides in the jungles of Guatemala.
The coffee plants are grown on rich volcanic soil which provides a unique ecosystem of mono-atomic elements for the plants to take in nutrients without the need for excessive fertilising or human intervention.
After the coffee berries have been picked they are brought down to the shores of Lake Atitlán where the berries are sun dried, cleaned and bagged.
This results in an exceptionally clean coffee in taste, quality, for our bodies and for the earth.
We begin with a great green bean and roast this awesome single locale coffee bean five different ways.
Our farmers’ practices are rooted in care and love for the land which hosts their communities and livelihood. These practices are adopted and taught within all farms organized by the Camesino Committee of the Highlands (CCDA).
The CCDA has a strong environmental ethos and trains its members to grow both their coffee and food organically – in ways that protect water and enhance natural forest cover.
There is strictly no use of pesticides and above all, the canopy is maintained to preserve the delicate ecosystem which provides many great benefits to crops by hosting a variety of natural predators to pests as well as shade for the workers and people.
The farms are USDA Organic certified by Mayacert in Central America.
Our relationship with the farmers is an extension of Café Justicia where we source these exclusive green beans. Cafe Justicia a Canadian coffee network that works alongside co-ops in Mayan communities on the hillsides above Lake Atitlan in Guatemala.
The co-ops are organized by the Camesino Committee of the Highlands (CCDA), which works to defend the rights of farm workers, recover lands stolen from Mayan communities in the past, and strengthen Mayan culture and spirituality.
Funds raised from the sale of this coffee are being used for Mayan-run community development projects focused on food sovereignty, housing, education, and stewardship.
Our effort has acheived a Fair Trade+ status by raising funds many times greater than the TransFair Certified Guidelines for Fair Trade.
We work with Eco-Cafe right here in Ontario to roast these beans with the attention and care which only a passionate, experienced roaster can provide.
The roasting team at Eco-Cafe have decades of experience and knowledge between them and roast this bean to perfection every time, whatever your taste for coffee is, you will find a favourite among our offerings.
We roast one batch a month and roast only what we know we will sell in that period so you can always expect freshly roasted coffee from Fiesta No Siesta.
“The coffee has a good acidic balance that provides a pinch of lemon rind. The body is rich and smooth, which provides an outstanding balance overall. Predominant flavours are dark baker’s chocolate, hazelnut, slight brown sugar sweetness and slight black tea finish.”
Roast: Fiesta OG
Cup for cup, Sunrise Blonde will perk you up more than any other of our offerings.
Roasted on the lighter side of medium, and the lightest we can roast this bean, the beans maintain the majority of their mass which gives you more caffeine for your bean. Expect very little roast characteristics and the nutty sweetness to shine through. Makes for a surprisingly pleasant espresso.
Roasted the way Martha from Central America taught us how. This is the original roast for this bean and how we were introduced to it; the Original Guatemalan.
This roast excels at balancing the spectrum of dominant tones without overshadowing the more subtle, delicate features of the coffee. All this with a noticeable kick of caffeine to get things started.
Fiesta OG may be the perfect cup of coffee to accompany morning rituals; providing both awakening and pause with every sip. Don’t be surprised if you find yourself in quiet meditation as the cup parts from your lips and acute awareness settles comfortably in the mind.
See the cupping notes above on exactly what to expect from this OG offering.
A specially crafted roast to bring out the full spectrum experience of this bean. Incredibly versatile, this roast delivers fantastic coffee as drip or espresso as well as anything in between (with the appropriate grind, of course).
Expect an exceptionally smooth, roasted chocolate body with balanced sweetness and a subtle fix of caffeine to support your daily flow.
An excellent offering for those looking for a fresh take on quintessential coffee.
This darker roast brings forth the dominant flavours while adding a smokey tone to the experience.
A great coffee shop coffee; bold, smooth, versatile.
Try preparing this on the stove top with a cafetera / moka pot for an authentic southern Italian experience for the senses.
As black as the midnight sky over the jungles of Guatemala, this roast caters to those who crave the dark side of the bean.
